Recipe for St Patrick's Day Barmbrack

 

My Italian mother made this bread every St Patrick's Day for my
Scotch/Irish father. It was delicious then and now. It takes some time to make but it is delicious



Barmbrack

Irish-American Soda Bread with Currants and Orange Zest

 

1 lb (3 cups) all-purpose flour, plus 1 tbsp

5 oz (1 cup) whole wheat flour

1/3 cup sugar

1 tsp baking soda

1 1/2 tsp kosher salt

6 tbsp cold unsalted butter, diced

2 cups cold buttermilk, shaken

1 large egg, lightly beaten

Finely grated zest of 1 med orange

1 cup dried currants or raisins

 

Position the rack in the middle and preheat the oven to 375F. Generously butter a 10-inch cast-iron skillet with 2- to 2 1/2-inch-high sides (you can also bake it on a baking sheet, but it will flatten more).

In a bowl, whisk together the 3 cups of all-purpose flour, wheat flour, sugar, baking soda, and salt. Sprinkle the butter over the top and cut in with a pastry cutter or 2 knives until the mixture looks like coarse breadcrumbs.

In another bowl or container, whisk together the buttermilk, egg, and orange zest. Add to the dough, stirring with a wooden spoon just until well incorporated. Combine the currants with 1 tablespoon of flour and stir into the dough. It will be sticky.

Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf into the prepared skillet and cut an "X" into the top of the bread with a serrated knife. Bake for 45 minutes to 1 hour, or until a toothpick comes out clean. When you tap the loaf, it will have a hollow sound.

Cool on a wire rack for 10 minutes, then remove it from the pan and let cool on the rack. Serve warm or at room temperature with plenty of unsalted butter. (Though I hear some people eat this with cream cheese).

Kids Kooking



Gazpacho Snack


1/3 cup chopped cucumber
1/4 cup chopped green pepper
2 tbsp. chopped onion
2 tbsp. plain yogurt
2 tsp. wine vinegar
1/8 tsp. garlic powder
1/8 tsp. ground red pepper
9 cherry tomatoes, each cut into 4 slices
36 Low Salt Ritz Crackers

In a small bowl, stir together cucumber, green pepper, onion, yogurt, vinegar, garlic powder, and red pepper until blended. Place a tomato slice on each Ritz cracker. Top with 1/2 teaspoon vegetable mixture. Serve immediately.
Makes 3 doz.

Kids Kooking French Cassoulet




This is surprisingly good. My grandmother made this every time we stayed for the weekend. Sooo good.

French Cassoulet

Partially fry 4 strips bacon; take from skillet. Brown 1 large onion, chopped; 2 cloves garlic, minced; 1 tbsp. chopped parsley in bacon fat. Add 1 cup white wine (or 3/4 cup water, 1/4 cup lemon juice) and 1/4 cup Heinz ketchup. Simmer 5 min. Mix with 1 cup diced cooked meat and two 1-lb. cans of Heinz pork and beans in 1 1/2 quart casserole. Top with bacon. Bake at 350˚F for 45 min. Makes 6 servings.

Kids Kooking 7 Layer Vegetable Casserole

7 Layer Vegetable Casserole


Instead of meatloaf for dinner every Monday night, my mother made this-every Monday. Even to this day, I consider meatloaf a delicacy!

Heat oven to 350. Using a 2 qt baking dish with a tight fitting lid, layer the following:
1 cup of white rice, uncooked
2 cup whole kernel corn, drained
1 8 oz. can of Hunt's tomato sauce
1/2 can of water over the two layers
1/2 cup each of chopped onion, and green peppers
3/4 lb of extra lean, uncooked ground beef
Cover meat with 4 strips of bacon, cut in half
Pour second 8 oz. can of Hunt's tomato sauce
1/4 can of water over layers
Cover dish and bake for 1 hour, uncover and bake for about 30 minutes longer. Makes 4 to6 servings.

KIds Kooking Puddin' Cookies



Puddin' Cookies



They're fun and so easy to make for scout meetings, open house, group functions, etc.

Mix well 3/4 cups Bisquick, 1 package instant pudding mix,( any flavor), 1/4 cup salad oil, 1 egg. Form into small balls, flatten with hand on an ungreased baking sheet. Bake 8 minutes at 350 degrees (mod) Makes 3 dozen.

Kids Kooking Pineapple Jello Rings



Pineapple Jello Rings

1 (3 ounces) box of lime or strawberry Jello
1( 20 ounces) can of Pineapple Rings/Rounds

Just pour off the liquid of a No. 2 can of Dole Pineapple. Replace with gelatin made with half the liquid in package directions. Chill until set. Run a little hot water along the sides and bottom to loosen. Then cut the bottom of the can and use it to push mold out. Cut between pineapple rounds and serve.

Kids Kooking Hot Dog Cuts/Designs


Hot Dog Cuts/Designs
Great for the summer picnics or BBQs
Hot dog design 1: Diamond
Score the top of the hot dog deeply — about halfway through the hot dog, using a crosshatch design.
Hot dog design 2: Spikes
Cut the hot dog three-quarters of the way through, down the middle. Cross with vertical cuts, also only three-quarters of the way through the hot dog.
Hot dog design 3: Palm tree
Cut three slices through the board (all the way through the hot dog), leaving one inch on the end uncut.
Hot dog design 4: Zig-Zag
Cut through to the board down one side. Make cuts on the the opposite side between the first ones.
Hot dog design 5: Spirals
Cut the hot dog in long quarters, making four separate strips.
Hot dog design 6: Snake
Cut through to the board on half of each side of the hot dog, leaving the opposite side uncut.

Kids Kooking Dude Ranch Beans



Dude Ranch Beans

2 cans baked beans, any style 
1/2 lb. franks cut in 1" cubes
1 tbsp. prepared mustard
5 small cooked onions
10 slices dill pickles
2 tomatoes cut into wedges
olive oil or cooking oil

Place beans in shallow baking dish. Spread frank cuts with mustard. Arrange with onions, pickles and tomato slices on five skewers. Brush with oil, place on beans. Bake in hot oven (400˚F) 30 minutes or arrange on broiler pan and broil until hot and lightly browned.
PS If you're using bamboo skewers, don't forget to soak them in water for about 30 minutes before threading them with food.

Ta Da!
Almost there!
        So,  I would say my hands are at 90% capacity, both Righty and Lefty. I still get occasional aches in my hands, but they are both functioning.
        A consistent regimen of hand exercises I found on the internet has helped to decrease stiffness and increase mobility (I think). I wish I could see a hand therapist but Medicare and my insurance don't see it that way. At least not now.
        I am impressed, with my doctor. One can hardly see the scar on my hand from the first surgery, while a small scar from the second thumb surgery lingers. I had the best surgeon I could have had!

        Refrigerator seems to be content to just be a refrigerator and nothing else. It seems Refrigerator has given up launching another attack on me, at least for now. I have decided to ignore it and just live my life as it should be, hectic and busy. Revenge will have to wait for another day.

Righty is Better!!

          It's been a week since the stitches came out of Righty's thumb. I'm doing limited exercises to increase range of motion. It's feeling better, still ugly, and occasional twinges, but overall, doing better.
          My typing has improved tremendously, little to no pain and my typing speed has increased to near pre-trigger thumb diagnosis and surgery. So overall I'm content and almost happy.  I am planning to enjoy this lull in pain and misery until the next shoe falls!
          The struggle has been not only with my thumb but more with my insurance and Medicare regulations for therapy and medication. I just don't understand how they can put people who are ill or struggling to maintain health through all this. It think it is a shame!

          So moving on, Refrigerator is acting up again. It's frigid, stern exterior is covering up more sinister plotting. I know it has been reaching out to Lefty and playing it COOL with Righty.  Lefty is actually feeling fine, health-wise, not engaging in much communication with Righty since Righty is able to take care of itself. I do believe Lefty is taking a vacation and simply just doing its job.

#20 THE UNFORTUNATE DEMISE OF MY RIGHT HAND

Grossness!
          It's been a week since surgery on my right thumb. The instructions I got from the doctor was to remove the large bandage and cover it with a band-aid. I can't believe it! after all that pain all I get now is a little insignificant band-aid? I have 4 stitches, and it looks GROSS. For some reason, this surgery ended up looking worse than the more extensive one I had in March.

          I can now type (slowly)  and I am no longer hunting and pecking. The pain has been bearable but still gets irritated when I move it. Lefty has been really sweet to Righty, doing what it can to cheer up Righty.
          Because I have to heal before attempting to move Righty's thumb, there wasn't much I  could do for 10 days. I did a lot of reading,  watching television, and avoiding Refrigerator (I sense that it has been very unhappy since I am not paying much attention to it). Righty or Lefty have also been shunning it,  which is now a triple insult to it.


          My husband has been doing all the cooking and cleaning...again. I can't drive so he's been my chauffeur too. I spent my time in different rooms of the house and office.  So this must be irritating Refrigerator to no end! I do eat breakfast in the kitchen, but it is an enjoyable time talking with Bill and planning our day. Refrigerator must be furious during that hour. I never knew being such a Bitch would be so nice!

The Deed is Done!

          I have been suffering greatly with my thumbs, the pain got worse and worse over the summer. I saw the doctor, my hand specialist, and we decided it was best to get the surgery...at least with the right thumb. The left thumb isn't as bad pain wise. He reminded me that any Occupational Therapy I may need for my thumb will not be covered by my insurance or Medicare. I reminded him how much pain I was in and he nodded.
          So I had surgery on the right thumb and I was surprised it only took 15 minutes, and they didn't knock me out either. They,  of course, numbed my entire hand but I was able to move my thumb when he asked...during surgery!!
           Once the numbness wore off I was in excruciating pain!! I left the building with a simple little bandage on my hand. After all, that pain and all I get is this a little bandage?

          It hurt by the time I got home and took a pain pill, slept most of the day. Lefty is pretty upset knowing it will have to go through this soon, maybe first of next year... that is, if I can stand the pain that long in Lefty. It is definitely not happy.

What's with that?
          Refrigerator was relatively quiet and just stood there as usual, cold and indifferent. Since I wasn't drugged, I was very aware of my surrounding and Refrigerator. I think it knew that and didn't dare mock me!

What's with that??
          I decided that my new hand issues were because of my neck, not Carpal Tunnel Syndrome. I went to a neck specialist and he agreed with me...a neck problem. I started Physical Therapy for neck pain. Unfortunately, my insurance will only pay for 5 sessions of physical therapy until December 2019. After the first of the new year, it can pick up again with 20 visits of physical therapy.
What's with that?

          This is because I went to Physical Therapy for my shoulder earlier last year!
          So the PT decides to see me weekly for five weeks and give me exercises to do at home between visits, like a coach. What else could I do but agree?
          The exercises are not easy but doable. I just have to remember to do them five times a day. Right now I can manage three but five times a day. It hurts! So I am going to manage it better along with my hand therapy.
What's with that??


          Meanwhile, Refrigerator is laughing, watching my bewilderment and confusion. It must be rewarding itself for doing such a good job upsetting my life. If only I could plan an unplug without its knowledge. I did look behind it and saw the plug that keeps it living and functioning. Should I unplug it? It would surely die! Die an undignified death! I must contemplate the deed.

Here We Go Again!!!
          Not only do I have a bad thumb with Lefty, but Righty also made my right thumb get trigger finger too!! I can't believe that Righty would be so jealous!! You'd think Righty would be happy that it's doing so much better.
          Saw the doctor today, gave me cortisone shots in both thumbs and a brace for Lefty. While I was there, I mentioned to him that Righty has been getting numb and tingly in the middle three fingers. He looked at Righty and announced, "It could be coming from your neck. Or it could be Carpal Tunnel Syndrome."
          Oh great, I go in with both thumbs bothering me and the doctor gave me a pain in my neck and/or Carpal Tunnel Syndrome!
What's with that?
          This is becoming rather frustrating, one thing gets better then another thing or two crops up and makes everything hurt...again. Now I have to see another doctor for possible neck "dysfunction".

          Refrigerator is enjoying this so much it developed mold on the bottom, a real smelly one at that.  Apparently, it thought I'd have to clean it up. Well, I fooled it! My husband cleaned it up and he was rather aggressive with it too. Serves Refrigerator right!!

Righty is almost good

          So-o-o, Righty is doing much better. I can now make a fist (closed hand-finger to palm) but not ready to squeeze tightly.  This is a vast improvement from when I started 4 weeks ago. I can type about 20 minutes, give or take a few minutes before fatigue begins to rear its ugly head. Righty has been having more fatigue than pain. My Occupational therapist said it's a good thing.
          My new exercises, for Righty, include strengthening and playing with putty. Actually, it is a lot of fun sitting at home with my fingers in the purple stuff,
          One more week and I can get relief for Lefty's thumb. It's been a real trial dealing with something that seems to have no future relief. The therapist and doctor are suggesting surgery on Lefty to remove the inflamed tissue. Not looking forward to another surgery this year. I just had one in March with Righty!

          Refrigerator has been keeping a close eye on Lefty. After all, they were in cahoots a while back. It's probably trying to figure out if Lefty is still interested. Since I have been babying/caring for Lefty, it's not had a need or want to stray for attention. Too bad Refrigerator

Revenge of the Ice Box

          Finally, I'm getting the upper hand. For weeks I've been dealing with my thumbs and right hand. I have been coping well, making adjustments to my daily activities and with help from my sister and husband, laundry and cooking are coming along. I'm driving short tips with no trouble steering. So I've been ignoring Refrigerator and it's been ignoring me, just the way I like it.
          I'm typing for short spurts and got back to writing our next mystery novel.  I'm back to swimming 3-4 times a week. So life has been sailing along, almost back to normal for most things.
          Well! Refrigerator has been rather quiet the last 3 weeks. I wasn't worried too much about it since life is getting back to normal (no traveling this year. though)


SILLY ME!
          I was maneuvering my car into the garage-which I have done millions of times. But for some reason, I overcorrected and messed up my right fender- car vs side of the garage.
          The Refrigerator- it planned this for weeks. That's why it's been so quiet all this time. The nerve of it. I feel revenge beginning to boil up within me, I must retaliate! Now!
          But how?

The Medicare Puzzle

          Lefty's thumb injection of cortisone only lasted 48 hours. Little or no relief past the 2 day weekend. I spoke to my Occupational Therapist who is working with my Righty, she suggested a thumb splint.
          After several phone calls and an act of God, I got the order from the doctor (who left town) for Occupational Therapy and a splint to keep Lefty's thumb joint stable thus relieving severe pain.
          I proudly presented it to my therapist only to find out they can't do the splint until I have finished with Righty's therapy
          "So I'm supposed to stay in pain for another 4 weeks?"
          "What can I say, that's Medicare at its best," she replied.
She gave me several helpful suggestions while I wait for Medicare, i.e. cold compresses, an over the counter thumb splint, etc. They give relief to Lefty's thumb as long as they are on, cold and the splint. But they don't help during normal daily activities.


          I am really getting irritated with Refrigerator. It mocks me more and more. I can't pass by it without some cold stare, never, never,  warming up to what I am going through, CAUSED BY IT. Someday, I don't know when I will get my revenge!

TRIGGER THUMB Unbelievable!!

          Lefty was not feeling well at all, in fact, Lefty was hurting rather badly around my thumb. I called the doctor and said,  "Lefty is really sick!!" I made an appointment for 3 days, (on a cancellation).
          The doctor sat down, moved Lefty's thumb twice, causing excruciating pain and announced, "You have Trigger Thumb."

          Immediately I wanted to say, "But I haven't  shot anyone...well lately in my books." I was able to keep my mouth shut, (It wasn't easy). He went on to explain it in long and big words. In essence, it's like a trick knee in my thumb. But popping my thumb in place doesn't work.
          He gave me a Cortisone shot in my thumb which hurt worse than the original pain.
           "What causes Trigger Thumb?" I asked.
           He shrugged, "Don't know, but it's fairly common ."
          "Could it be from overworking Lefty since Righty has been out of commission for a while?"
          "Don't know," he replied."
          In the injection, he included Lidocaine for pain. So my thumb felt numb and prickly like it had a root canal.


          I could swear Refrigerator is smirking at me, all day long.  The cold, ridge, dark smirk that could get nasty.

New beginning
          My right hand is doing rather well! Typing now for 15 minutes at a stretch. My hand feels tired but no pain. I use an egg timer to be sure I don't go over the time allowed to type. I've begun our next Skylar Drake Murder Mystery, Game Town (temporary title).


          After several weeks of intense range of motion therapy, I can almost make a fist but only with little resistance (still no squeezing). I can do most chores around the house except for chopping foods and lifting heavy items, i.e. laundry hampers, grocery bags, etc.
           I've been busy with our new book, and working on my hand therapy, basically ignoring Refrigerator.  Lefty has been feeling ignored and looks for avenues to get my attention. Why Lefty actually felt pain in its thumb all week, maybe it's trying to get my attention... it worked. I used heat on Lefty's thumb and massaged it. Lefty seemed to feel better. At least Lefty isn't plotting with Refrigerator for some type of revenge. You just can't be too careful with these cold, rigid, aloof edifices like Refrigerator.  And I noticed it's been very quiet this week. Not sure what's up.
